Message: You can define BEST many ways .. those two are quite complex tactically and have lots of room for work in new theory.
I like the French Defense against e4 .. very solid, although somewhat restrictive.
Against d4 I like Queen's Gambits

Message: Although I may not be in the same league (skill
wise) as some of you: I like the Caro-Kann,
the "Orthodox" defense with the Queen's Gambit,
and now and then -- some variations of the
Sicilian (like the Najdorf Variation)
I started playing at this site not very long ago.
"They" started me out with "ELO 1200" ---
I must have been playing weaker players -- and
am now up to an even "1400". Lately, playing some
"better" players --- so I WILL lose, eventually!
